Mediterranean salad

I had a very heavy lunch today and hence, I decided to go slightly easy on my dinner. πŸ˜‰ So here’s my Mediterranean salad.

– Olives, feta & kalamata
– Edamame
– Cherry tomatoes
– Cucumber
– Iceberg lettuce
– Carrot
– Red peppers
– Roasted peanuts
– 1/2 teaspoon olive oil
– a pinch of salt, all mixed well.

Of course, that was not what I only had! The salad made a great side to my favourite Tesco’s, ‘cheese Ploughman’s sandwich’. I should have probably made the sandwich myself but, I love the Tesco’s version of it. Yumm πŸ˜€

    Im regularly making salads with our lunch these days.
    i’m in love with freshly grown local veges in bundaberg.
    I also feel very happy that we are eating healthy and getting our daily nutrient requirements.
    I’m actually bored of eating same salads everyday.
    Im defenitely gonna try this salad of your’s.
    Please post more abt salads and their nutritive value.

    • Thanks a lot Chetu. I have done a couple of posts on salads & salad dressing. It’s nice that you are eating salads everyday. We all need good nutrition no matter what we weigh. I will try and do more eventually when I get some recipes. πŸ™‚ xxx

    • Hahaha.. My posts are so stereotype now. It’s either about fashion at a stretch or about food. πŸ˜€ I love my salads but that doesn’t make up my meal. It’s always a side. Lol. But that salad did taste good πŸ™‚ Thank you Preethi. xxx
